Shared Kartoffelsalat with forayed herbs

Share and exchange what is good. No conditions. Limitless. Give it that little extra. Here it is, the creamy garlic that ties it all together.

Get new harvest small potatoes for this quick fix:

  • 700g small new potatoes
  • red onion
  • red wine vinegar
  • salt
  • pepper
  • 3 garlic cloves (boiled together with the potatoes)
  • olive & or walnut oil
  • mustard
  • chives
  • parsley
  • chervil
  • lemon juice & zest

Boil the potatoes (cut them in half if you like) and the garlic cloves. No peeling needed! Press the soft garlic out of its peel, and use a fork to crush it with sea salt flakes to make a paste. Add this to the vinaigrette. Put all of the vinaigrette ingredients in a screw top jar. Close and shake: it’s ready. Keep the rest in the fridge. Throw potatoes, vinaigrette, red onion and freshly chopped herbs in a bowl. Mix.
