One or Two Lentils with Tomatoes

The state of being a parent comes with responsibilities. One is to bring joy and fulfilment to the hearts of those you parent. Do good. Also to yourself. Make a summer savoury salad.

Use Puy lentils. They do not disintegrate while cooking so they are ideal for salads. Find the best tomatoes you can. Maybe you are so lucky as to grow your own or to know someone who does so on a balcony or on a plot of shared land. Get to know the collective garden initiatives in your neighbourhood!

  • 250g Puy lentils
  • 4 tbsp olive oil
  • 1 garlic clove
  • 1 red onion, thinly sliced
  • red wine vinegar
  • 4 tomatoes
  • parsley and chervil
  • sea salt
  • pepper
  • (vegan) gorgonzola

Marinate the red onion in red vinegar and salt. Cook the lentils for 20 minutes in boiling water. Drain. Mix with the onion, parsley and chervil. Serve on a large plate with the sliced tomatoes and (vegan) gorgonzola.
